We are a family run Smokehouse situated close to the banks of the River Cree, offering salmon which has been smoked in the traditional way for over three generations. With a wealth of experience gained from the catering and restaurant trade and by using only the very finest ingredients, Creeside are able to offer customers the very best in traditional Oak Smoked Scottish Salmon.

To suit all palettes ranging from the connoisseur to first time tasting, we smoke Highland Salmon fresh from the farm and during the summer season, Wild Salmon is brought to us daily, fresh from the river by owners of licensed nets on the River Cree, Galloway. Upon arrival the fresh salmon are meticulously checked, weighed, recorded, processed in preparation for the smoking process.

The fresh salmon are then hand filleted and dry cured using top quality ingredients. These can include sea salt, honey, syrup, brown sugar, whisky and a variety of freshly picked herbs producing mouth watering results. Our most popular smoked salmon however, is that smoked to our own age old, traditional recipe. The cured fillets are smoked in small traditional smoke- houses over oak chips and sawdust from whisky barrels. When the smoking process is complete, the fillets are hand pin boned and trimmed.

The resulting sides of succulent freshly smoked salmon, whole or sliced in various sizes, are immediately vacuum packed in tartan, clear or gold pouches and are prepared for posting in either standard packaging or superbly attractive presentation packs. These are poly-insulated boxes, wrapped in 'postal proof' covering with our name, information and pictures depicting the history of our traditional craft of smoking salmon. This packaging is suitable for your own order or makes an unusual and excellent gift of freshly Smoked Scottish Salmon, even more extra special.

Wild Scottish Venison

Also available is Creeside's cold smoked Wild Venison. This provides a rare opportunity to create exotic dishes with the wonderfully tender, wild roe and red deer cuts. These are lightly brined and smoked in the same way as the salmon, sliced and vacuum packed. Fresh Wild Venison is available as whole joints, casserole, very lean mince, spectacular steaks, or delicious sausages and quarter pound burgers, vacuum packed and delivered by next day courier.

Wild Venison is a very traditional meat which is fast becoming more popular today by using modern methods of cooking. It is also a completely natural, fat, cholesterol and additive free, wholly nutritious, alternative to beef.
